I am in love with this recipe! They are super easy to make, and really tasty with a cup of coffee.
I like to call them breakfast cookies, since I do not like regular cooked oatmeal. They are not too sweet, the almonds provide a nice crunch, and I like to add a little cinnamon to the recipe. They are a little bit fussy to spread out on the pan into rounds, but everything else is so easy to put in a bowl and mix up that even that is no big deal. You can have these in the oven in around twenty minutes tops. I would recommend under baking them slightly if you like them a little chewy in the middle, or go the full baking time if you want them crispier. Yum!
