I wanted ice cream sandwiches, but did not want to make cookies, so I tried the honey graham crackers we had in the pantry with (homemade!) strawberry ice cream. It’s a great combination!
They are quick and easy to make, just a small scoop of ice cream squished between a graham cracker that has been broken in half. I wrapped them up in wax paper side-by-side and then stored in a freezer bag.
Easy to grab a pair to share with John after dinner for a sweet treat. They are even better the next day after the graham cracker has a chance to soften a little. So good – you should make some!
